The Circular Economy Coffee Research Team at Universitas Jember (UNEJ), Indonesia, achieved an important milestone in coffee processing innovation through a strategic collaboration with PT SAS. On November 3, 2025, the research team completed a major discussion regarding the design and construction of an advanced coffee fermenter aimed at optimizing coffee bean fermentation processes.
The fermenter is designed as an intelligent processing system capable of monitoring and analyzing fermentation conditions in real time. Several critical parameters including pH, glucose, alcohol, ethanol, oxygen, and carbon dioxide levels can be accurately tracked throughout the fermentation process. This technology enables coffee producers to maintain controlled, consistent, and optimized fermentation conditions to achieve superior coffee flavor profiles and product quality.
In addition to technological innovation, the fermenter also incorporates ergonomic and economic design principles to ensure ease of use for farmers and scalability for industrial coffee producers. One of its most innovative features is the integrated gas capture system and carbon dioxide inlet valve, which supports advanced coffee processing techniques such as carbonic maceration.
This system allows producers to create unique and high-value flavor characteristics while supporting circular economy principles through improved gas utilization and waste management. By combining research expertise with industrial applications, the innovation aims to strengthen coffee processing efficiency, improve specialty coffee quality, and enhance the competitiveness of Indonesian coffee in the global market.
The project represents a strong collaboration between academic research institutions and industry partners in developing sustainable technologies that support both economic growth and environmental responsibility within the coffee sector.
